so just wanted to post this Puttanesca sauce.
Man it is such a great dish. Lovely change of pace from the common sweet sauce.
Doesn't look like much But it makes the house smell like the sea and it sure is good.
Puttanesca:
-1/4C evoo
-1C onion, finely chopped
-6 cloves garlic, minced
-2T anchovy fillets minced
-1/2t red pepper
-2T tomato paste
-2 (28oz cans) whole peeled Italian tomatoes with juices
-pinch of sugar
-3 splashes of fish sauce
-2 basil sprigs, chopped
-1C chopped olives
-2T capers
-sauté onion, garlic, anchovies and red pepper in oil till brown. Add tomato paste.
Stir 1 minute. Add canned tomatoes and juice. Stir in sugar, fish sauce, olives, capers.
Season. Bring to boil. Simmer till thickens. Add basil 10 minutes before serving. Season.
I served it with bow tie pasta and some chopped turkey tenders I had laying around.
