I have to admit I feel sort of like a n00b posting this, after reading a few other recipes. But this is a really strange recipe that comes out really well, you just have to be patient when cooking it. :) I added this recipe to another forum I frequent, so I thought it would be a good idea to add it here as well. I apologize for it all being so squished together. Still figuring out the post editor. :(
You need:
1kg chicken pieces
Salt, and freshly ground black pepper (about a pinch of each)
a tablespoon of fine apricot jam
and a full liter of Coke-a-cola (:D)
What you do is place the chicken at the bottom of a large pot, add the salt, pepper, jam, and then pour over the coke. Bring it to a boil and then let it cook slowly until the coke-a-cola thickens into a sweet/sour sauce around the chicken. It usually takes a good few hours, but it depends on how hot your stove is set, so you have to keep an eye on it every now and then. You don't need to stir it (it simmers slowly in the pot without the need to stir), you can just leave it and do other things in the meantime.
What you get in the end, is that the sauce would cook through the entire chicken piece, and it will be extremely tender and juicy, and you'd have this dark sweet/sour sauce to use when you serve the chicken. Its one of my most weird recipes, but I have two daughters (15 and 11) and they love it when I make it :).
I haven't really tried any substitutions, but I think it should also be just as good if you use duck, or other poultry, and I have added some dried mixed herbs to the mix before cooking and it was ok, but not as good as the original, and I only use coke-a-cola. Any other type of cola won't have the same effect. Oh yea, its best not to taste the sauce while its cooking. I mean you can, it just doesn't really taste very good. I sometimes call it "leap of faith chicken" because you can't touch or taste the chicken until its done :)
