Steak - flavor combinations

I don't know about you, but I love looking on the internet and trying out new things.   

I have three go to celebrity chefs who have a tonne of informative youtube channels -In no particular order I look for Marco Pierre White, Gordon Ramsay and Jamie Oliver -  however, have you ever decided to look at more than one chef's video, and do a combination of what they suggested?  That is exactly what I did a couple of weeks ago - and it was such a good outcome - I thought I would share: 

Steak 

  • 2 pieces of porterhouse steak - you could other cuts of steak - but this is what I purchased
  • 1 onion
  • white button mushrooms about a cup 
  • 2 cloves of garlic 
  • 1 spring of rosemary
  • 1 bunch of parsley
  • 1 lemon 
  • good quality olive oil 
  • 1 small bottle of cream 
  • salt and pepper to taste 

Methodology 

  • On my chopping board I put my steak (which was at room temperature) and rubbed it down with oil and and seasoned it with salt and pepper 
  • Placed it in a hot pan with a little bit of oil to seal the steak and at that time, rubbed raw garlic on the meat, then you put your rosemary and you run that into the hot oil and rub it over the cooking meat, turn the steak over and repeat and take it out.  - This needs to be done quickly otherwise you will end up with overcooked steak and you don't want that!   
  • Into the same hot pan i added the onion and garlic and rosemary and then added the mushrooms - which were finely diced - added a splash more oil - and cooked down just a bit, = then you turn it off
  • Then back on my chopping board, I gave it a good splash of oil, chopped parsley, salt  pepper and rubbed the steak onto the board - providing it with an extremely good covering with the juice of half a lemon;  
  • Then you put your steak into the pan with mushrooms and cream mixture and simmer for a few more minutes or until the cream has reduced.  

What did I serve with it: 

  • Diced kumera which has been cooked in oil in advance 
  • WIth a garden salad 

What would I do differently if I did this again - 

I probably would not add the steak to the cream and mushroom mixture - as I like my steak medium rare - and by putting it into the pan, i didn't see the pink meat - BUT the meat was still succulent.   Personal preference I say - what is your favourite take on the above?  I look forward to your comments - if and when you have the inclination to post.   

Postscript - 

I said to my friend, what a wonderful flavour profile - and friend replied - I can't taste anything - I have extreme bad hayfever!   Oh shivers - I didn't know if you have hayfever that you can't taste the food - what a terrible thing not to be able to do.
