So I am doing a Sous Vide cook from the refrigerator on turkey breast with the water temperature at 155 F for 2 hours and searing the meat after letting the meat cool down to room temperature.
After clicking on the *Cook* button, it appears that the meat would be done several minutes earlier.
I haven't cooked this in real life but since the students are working in thermodynamics, I bet it is close.
