Caramel Bowl Help!

Hey everyone, Haven't been on in a while, finally got the internets back. 

I've got a catering event coming up and one of the deserts my partner and i came up with was candy cane ice cream in a sugar bowl.

problem is perfecting this bowl made from caramelised sugar.
So far i've tried useing straight caramel, and rolling it around in a mold made from tin foil until it sets, then chilling it, but it breaks before i can peel the mold off. now i'm throwing some butter into the sugar and water and rolling it around, letting it set, adding another layer and chilling, then removing.

any other ideas how i may go about this?
