We all have those meals or dishes we can throw out on a lazy Sunday or after a grueling, mid-week work day.
Some of my favorites are:
- Spatchcocked Chicken with Glazed Vegetables
- Herb Roasted Baby Potatoes served along side a protein.
- And for proteins, nothing beats a tender cut quickly pan roasted, whether its a steak, a piece of fish like halibut or salmon, or an airline chicken breast.
